We use traditional viticultural practices, steeped in careful agricultal experience.
The main grape varietals, in order of importance, are:
• grenache, cabernet sauvignon, shiraz, cinsault and mourvedre for red and rosé wines,
• sauvignon, vermentino, ugni blanc and clairette for white wines.
Each grape varietal is picked at the height of maturity between the beginning of September and the end of October. We follow the practice of green harvest (method of trimming back the number of grapes on the vine around mid-July while they are still green) in order to limit yields and increase the concentration and therefore the quality of our wines.
